After spending the past few weeks working from home, we are finding ourselves gravitating to the kitchen more frequently than usual. If you feel like trying something new, try making our favourite healthy pancakes this weekend! They are so easy to make and are sure to put a smile on your face once you’ve tasted them. Top them with anything you have in the cupboards - such as maple syrup, coconut yogurt, nuts, or try microwaving some frozen berries to make a scrumptious berry coulis to put on top – YUM!

Pancake Recipe:

Main Ingredients:

½ Cup Oats

1 Ripe Banana

3 ½ Tbsp Milk of choice  

Topping Ideas:

Frozen Berries (microwaved to make a gooey sauce)

Maple Syrup

Nuts

Coconut Yogurt

Chopped Banana 

Method:

  1. In a blender, blend the banana, oats and milk together until smooth.
  2. Pour mixture into a heated non-stick pan. This mixture makes around 6 small pancakes depending on how much you pour into the pan each time.
  3. Flip the pancakes when cooked through or when you see tiny bubbles appear in the middle. Remove from pan when cooked.
  4. Top your pancakes with your favourite toppings.
  5. Enjoy!
